Do you currently have an abundance of spinach & parsley in your garden? Ok, I hear ya! You don’t —lol. Well, here’s the thing, even if you don’t have those things in your garden, these are two highly beneficial greens that are so wonderful for your body and easy to get at the store. so, why not try black lentil spinach parsley salad?

There is plenty of information out there on the benefits of spinach and parsley so I’ll let you go do your own research but just to name a few Parsley is rich with Vitamin K, helps with Bone Health, rich in Vitamin C and can help with diabetes, heart disease and more. Spinach is rich in calcium, magnesium, iron & much more.

Pair these super-greens with high protein black lentils and your body will be SOOO happy with you! This recipe is packed with flavor & so delicious, particularly with the Walnut Maple Salad dressing.

Really the only “bad” ingredient in this delicious salad is the Maple Syrup (not bad for you —but for those watching their sugar —don’t put too much) But fun tip!!! –if you have this sweet salad dressing on your salad –it should not affect your blood sugar too much since you are pairing it with vegetables.

ingredients for maple walnut dressing

  • 1/2 cup walnuts
  • 1/4 cup Apple Cider Vinegar
  • 1/2 cup Maple Syrup
  • 1 Tsp Ground Mustard Seeds
  • 1 Tsp Kosher Salt/celtic salt/himalayan
  • 2 Tbs Olive oil (you could omit this & put 4 Tbs Olive oil)
  • 2 Tbs Avocado Oil
  • 1/2 Tsp White Pepper
  • Pinch of Garlic Powder

how to make maple walnut dressing

For the dressing, simply blend all of these ingredients together in a great quality blender. If you’ve been hanging with me for a while, you know I love my Vitamix. Everything always blends so smoothly.

Black Lentil Spinach Parsley Salad

Course Salad, Side Dish

Ingredients
  

  • 8 cups of Spinach
  • 1/2 cup soaked Black Lentils
  • 2 cups finely chopped Parsley add in microgreens too if you have some
  • 1 Tomato
  • 1 Red Onion
  • 2 Tbs Feta Cheese
  • 2 Boiled Eggs
  • 1 Cucumber
  • 1 Red Bell Pepper
  • 2 Radish

Instructions
 

  • Boil eggs on stovetop. Remove from heat.
  • While eggs are boiling, chop spinach, tomato, red onion, cucumber, red bell pepper, radish and parsley.
  • Rinse eggs in cold water and peel. Slice eggs.
  • Combine all ingredients in large salad bowl.
  • Add lentils and feta cheese. Mix.
