okkkk sisterfrennn, so I actually made this video of how to make the best homemade chicken broth (it works GREAT) but personally I think you should follow my chicken broth recipe on Part 1 of the Tortilla Soup video. The whole first part of the Tortilla Soup video, I am making broth from scratch using the Instant Pot. The only difference is the amount of vegetables I am using for the stock.
I have completely stopped using any type of seasonings in my chicken broth. In fact when I went to my friend’s house, I made her & her family chicken and dumplin and she said, “You didn’t add ANY seasonings AT ALL?” I said, “NOPE”. She was SHOCKED.
hear me out… the secret to a great stock is GARLIC, ONION, SHALLOT, JALAPEÑO, and a FARM FRESH CHICKEN.
I swear you don’t need spices and seasonings if you add enough of these veggies.
And contrary to what your Granny and Aunties say…you do not need store bought “chicken flavor.” Seriously, you don’t.
In the video, you see me using my soup pot, but instead of putting it in the soup pot, use your Instant Pot “Slow Cook” feature. It’s better because you can literally walk away and you don’t have to worry about the broth boiling over. Your family and friends will be slapping their legs, its sooooo good.
The Best Homemade Chicken Broth
Equipment
- Instant Pot
Ingredients
- 1 Whole Chicken
- 1 bundle carrots
- 1 whole bundle celery
- 4-5 whole garlic YES–GARLIC PALOOZA - I promise it will deepen the flavor!
- 2 whole onions
- 2-3 whole shallot
- 2-3 whole jalapeño It won’t be spicy - you can use whatever hot peppers you have on hand…thai chiles, habaneros, serrano pepper, etc.
- Celtic Salt
Instructions
- Put clean chicken in Instant Pot, add in all chopped vegetables, (carrots, celery, garlic, onion, shallot, jalapeño)
- Select “Slow Cook”.
- Soup will cook for 8 hours. Don’t worry if you go to bed and it goes beyond 8 hours, the Instant Pot will just go into a “warming” setting.
- In 8 hours once the chicken broth is finished, allow it to cool for several hours.
- Then run your hand through and pull out the skin and gently shred the chicken with your hands.. Slimy skin while eating soup is not it. But if you like it—just leave it.
