Sister Frenn - The Best Chili

I love Chili!!!! I mean who doesn’t?! It’s one of those all year round yummy recipes. You can put it on a hot dog, eat it plain, or do my all time favorite –  make French fries and use the chili for dipping! It’s absolutely delicious!!

Oh and duh, chili freezes BEAUTIFULLY. Make a batch and store half in the freezer for one of those days that you just don’t feel like cookin —BUT— feel like eatin good! Now that I live on the East Coast,  I’m certain that on one of those cold days, I’ll be freezing and won’t feel like cooking. This will for sure be in my freezer!

1 cup Black Beans

1 cup Kidney Beans 

2 lbs Ground Beef or Ground Turkey

1 Whole Onion

1 Whole Bundle of Garlic (or more) 

1-2 Jalapeños or Habanero Peppers

1 Serrano Pepper

1 Green Pepper

28 oz Diced tomatoes

1 Shallot

1 can tomato paste (tomato sauce works too)

3 Tbsp Chili Powder

2 Tbsp Garlic Powder

2 Tbsp Onion Powder

1 Tbsp Paprika

2 Tbsp Cumin 

1 Tsp Chipotle Powder

1/2 Tsp Cayenne

1/4 Tsp Liquid Smoke

Salt 

Pepper

steps to make the best chili

 

1. First, soak your beans overnight in about a tablespoon of cold water – Very important! 

 

2. The next day, pour off the water that the beans were soaking in. Then, rinse beans thoroughly. 

 

3. Afterward, pour the beans into the Instant Pot.

4. Cook your ground beef on the stove. Then, make sure the meat is cooked thoroughly.

 

5. Once the meat is done cooking,  add all the ingredients into the Instant Pot. Then, click the Bean/Chili button

6. After the chili is done cooking, stir in 1 teaspoon of baking soda to neutralize its acidity. However, be cautious and add the baking soda in slowly as it may cause the chili to bubble up.

 

7. Usually, I unplug my Instant Pot and let the chili cool overnight before refrigerating it the next day.

If you are making this recipe for a dinner party or cooking for your new boo—make this two days before hand. Then, reheat it on the stove top with a few drops of water right before serving. I can assure you, your guests will be PLEASED.  By the third day, the flavors will have melded perfectly, making it taste absolutely delicious!

Don’t worry about the calories! Go ahead and add some of these toppings:

 

  • Avocado
  • Shredded cheese
  • Fresh onions
  • Green onions and
  • Cilantro  

 

You can even add cowboy candy. All great toppings!
